Reading Thermal provides industrial oven temperature profiling systems to ensure that bakers have the critical information they need to maintain optimum conditions and correct problems.
The heat transfer experts at Reading Thermal, located in Sinking Spring, Pennsylvania, have studied the commercial baking process for nearly 25 years. Our team manufactures and supports a baking industry standard – the SCORPION® 2 Profiling System – a complete measurement system that can capture the four primary baking parameters: Temperature (Air, Band & Product Core), Airflow, Energy Transfer, and Humidity.
The “brain” of the profiling system is the SCORPION® 2 Data Logger, which captures and stores profile data from Smart Sensors that travel through the oven with your product(s). The Data Logger has the ability to acquire data from as many as 32 sensor/input channels as fast as ten times per second. Users download the data to a computer for display and analysis, and the data can be saved until deleted.
Why Temperature Profiling is Essential
The attributes of baked goods are determined by the type and amount of heat applied to them while baking, and every oven bakes differently. Temperature profiling will provide you with reliable data to help you optimize your process and make corrections when required.
The advantages include the following:
- More control over product quality
- More control over product consistency
- Increased productivity
- Reduction of energy consumption and costs
- Improved process repeatability
- Quick troubleshooting
Reading Thermal’s Innovative Solution
Reading Thermal’s SCORPION® 2 Temperature Sensor Array measures temperature at the product level and accurately conveys what your product experiences over time.
There are two different types of pluggable temperature sensors. An Air/Air sensor is designed for open mesh conveyors and measures upper air temperature above the conveyor and lower air temperature of air that rises through the conveyor. An Air/Conveyor sensor is intended for tight or solid mesh conveyors and measures air and band temperatures.
Product-core-temperature measurements can also be made simultaneously with the product probe inputs on the sensor array. This can mean the difference between excellent quality and an under-baked or burnt product.
Connecting different sensors and sensor arrays to the SCORPION® 2 Profiling System and sending them through the oven with your products enables the system to provide information about heat flux (energy transfer), humidity, and airflow (velocity). The state-of-the-art profiling system allows you to easily validate your kill step for FSMA and food safety compliance.
Customers who only have an interest in temperature measurement may find the lower-cost SCORPION® 2 LITE Temperature Profiling System to be the ideal solution. Measuring temperature is usually the first step to understanding the baking, drying, cooling, or freezing processes. We offer a full range of measurement options to cover product core temperature, conveyor surface, and environmental air.
