How to Calibrate Your Oven
The SCORPION® 2 Profiling System is a diagnostic tool used to ensure every oven you use abides by the exact same standards and parameters used to bake your products. Depending on what your bakery uses, chances are not every product line uses the same identical make and model of oven. Some are sourced from different vendors, others may be later or earlier editions of the same model, so calibrating each oven is vital.
Calibration aligns your oven parameters to consistently apply the same baking parameters across all of your lines, ensuring that everything produced is of the same quality. 1. Choose Your Smart Sensor
Reading Thermal’s Data Logger is the brain behind the SCORPION® 2 Profiling System, but it needs to be paired with one of our Smart Sensors to compile and store data. Depending on what you’re interested in measuring, you can couple the Data Logger with a Temperature Sensor Array, Digital Humidity Sensor, Heat Flux Sensor, and so on.
2. Running Through a Baking Cycle
The Data Logger and Smart Sensor can then be placed on your oven’s conveyor belt and run through a complete baking cycle. The Data Logger will record and store data throughout the entire process, giving us an exact picture of the oven’s performance.
3. Analyzing the Results
The results compiled from the baking cycle are stored on the Data Logger as one of several saved profiles. These profiles can then be downloaded onto a separate computer later for in-depth analysis with our SCORPION® Software Version 8 (SV8). These profiles can then be displayed in their own windows for a comparison of data side-by-side to identify any discrepancies.
4. Calibrating Your Ovens
The data gleaned from your tests and analyzed with our software tells you exactly what’s going on in your ovens, including hot and cold spots, temperatures, humidity levels, and more. With the information acquired from your profiles, you can then adjust oven settings for better performance before running another test cycle for confirmation.
